Over the past few weeks, we've been following some of Mallorca's most talented chefs to their favorite spots on our beautiful island. The landscape for our first tour was chosen by chef Claudio Lemos: Mondragó Natural Park. Claudio is accompanied by his colleague and good friend, chef Igor Rodríguez. Both admire the beauty of the Mallorcan landscape, which inspires their work day after day.
The landscape in the south of Mallorca is undoubtedly one of the most beautiful in the Mediterranean. The south of the island combines nature, tranquillity and crystal clear waters lapping against the coast.
Located in the southeast of the island, the Mondragó Natural Park is a mosaic of different environments that give the landscape an incredible diversity. Wild olive and pine forests, dry agricultural fields, coastal savannahs, the pond of s'Amarador and the brackish lake of ses Fonts de n'Alis, plus coastline, cliffs and sandy beaches.
S'Amarador is part of Cala Mondragó, one of the most beautiful and largest coves in Mallorca, divided into two beaches: s'Amarador and Cala de ses Fonts de n'Alís. The depth between the two coves reaches six metres on a sandy bottom.
S'Amarador was declared a Natural Park in 1992 and a Natural Area of Special Interest for Birds by the European Community in 1995. The landscape is characterised by a fine sandy beach with a gentle slope and a rich vegetation
that consolidates the dune system (pines, sand thistles and barrens). Particularly noteworthy are the pond that surrounds s'Amarador and the waters of the torrent that flow into this sandy area and accumulate in the form of a small lagoon, where the tortoise was reintroduced in 1985.
There are many ways to pass the time here. Whether bathing in the turquoise blue water, walking through the pine forest and in the brilliant white sand or a break at the lookout point with a view of the species-rich flora and fauna. Here at the latest it becomes clear: Mallorca is pure nature, landscape and life.
Inspired by this dreamlike setting, Claudio Lemos and Igor Rodríguez have created a wonderful recipe with their favourite
Mallorcan ingredients.
