Flor de Sal d'Es Trenc, the white gold of Mallorca, is the absolute premium product of our salinas. It is the result of the evaporation of the sea water, which crystallises into fine flowers on the surface of the salt ponds during the summer months. Traditionally harvested by hand, the special properties of the salt flower remain untouched, resulting in a product of exceptional quality.
To obtain the coveted Flor de Sal from Mallorca in its unique quality, special climatic and biological conditions are required. Before the seawater enters the salt pans, it flows through large beds of Posidonia oceanica. The presence of the marine plants is considered an indicator of the excellent quality of the water. After entering the salt flats, the natural salt takes a total of six months to mature into Mallorca's white gold. The crystal clear sea water, which contains 35 grams of salt per litre, flows through a three-kilometre channel from the depths of the sea into the salt flats. Once there, the sun and wind evaporate the water to a salt content of up to 250g/l. When all conditions are met, very fine salt crystals accumulate on the surface of the water in the salt pools for a few minutes every day from May to October, their fanciful shapes resembling white flowers.
Flor de Sal d'Es Trencis harvested exclusively by hand. The salt workers of the Salinas d'Es Trenc use traditional rakes to scoop the salt flower from the water surface and then dry it under the Mediterranean sun. The production and packaging of Flor de Sal d'Es Trenc is also done by hand directly in our salt pans.
